Potato Pancakes

These are creamy pancakes that go well with sausages in beer.

Ingredients
  

  • 5 lbs Potatoes (peeled, washed and cut into chunks)
  • 1 Onion (cut into pieces)
  • 1 clove Garlic
  • ½ tsp Salt
  • 2 tbsp Olive Oil
  • ¼ cup Flour
  • ½ tbsp Additional Salt (potatoes need salt to come alive)
  • 1 tsp Black Pepper
  • ¼ cup Panko Breadcrumbs
  • 2 Egg Yolks
  • 2 tbsp Parsley Flakes

Instructions
 

  • Boil Potato chunks in salted water for 10 minutes then drain.
  • Place pre-cooked potatoes in food processor and puree.
  • To potato puree add Onion, Garlic and Salt and pulse to incorporate with potatoes.
  • Add Olive Oil, Flour, Additional Salt, Black Pepper, Panko Breadcrumbs, Egg Yolks and Parsley Flakes. Blend until smooth.
  • Spoon potato mixture into hot skillet with about ½-inch of cooking oil heated to medium high. Cook pancake a few minutes on each side until golden brown. Serve with applesauce and sour cream or just enjoy plain.
