Sausage in Beer Marinade

This is a terrific appetizer/hors d’oeuvre but can also make a splendid entrée served with a warm sauerkraut side. Even though this is really a German-style dish I use sweet Italian sausage and it is great. Of course, you can use a bratwurst or some other sausage.

Cook Time 20 minutes
Marinating Time 12 hours
Total Time 12 hours 30 minutes

Ingredients
  

  • 5 lbs Sweet Italian Sausage
  • 1 can Beer
  • Water (enough to cover sausages)
  • 3 cloves Garlic
  • ½ tsp Black Pepper

Marinade

  • 2 Pureed Onions
  • 2 cloves Minced Garlic
  • ½ tsp Salt
  • 2 tbsp Sugar
  • 1 cup Additional Beer

Instructions
 

  • In saucepan place Sweet Italian Sausage, Beer, Water (enough to cover sausages), Garlic and Black Pepper. Bring to a boil then remove from heat and let sit for 5 minutes.
  • Drain and cut sausages into 1-inch chunks for hors d'oeuvres or larger for an entrée serving.

Marinade

  • Place cut sausages in a mixing bowl and marinate overnight in Pureed Onions, Minced Garlic, Salt, Sugar and Beer.

Cook

  • Place sausages on a sheet pan and bake in a 400℉ oven for 15-20 minutes or until sausages are brown and a little tacky. Or pan-sear or grill until browned and tacky.
