½tbspAdditional Salt(potatoes need salt to come alive)

¼cupPanko Breadcrumbs
2Egg Yolks
2tbspParsley Flakes
Instructions
Boil Potato chunks in salted water for 10 minutes then drain.
Place pre-cooked potatoes in food processor and puree.
To potato puree add Onion, Garlic and Salt and pulse to incorporate with potatoes.
Add Olive Oil, Flour, Additional Salt, Black Pepper, Panko Breadcrumbs, Egg Yolks and Parsley Flakes. Blend until smooth.
Spoon potato mixture into hot skillet with about ½-inch of cooking oil heated to medium high. Cook pancake a few minutes on each side until golden brown. Serve with applesauce and sour cream or just enjoy plain.
