Sautéed Belgian Endive Salad w/ White Balsamic Vinaigrette

Ingredients
  

Endives

  • 8 Endives
  • 1 tsp Salt
  • 1 tbsp Lemon Juice
  • 1 Onion - thinly sliced
  • 3 tbsp Olive Oil

Vinaigrette

  • ¼ cup Olive Oil
  • 2 tbsp Lemon Juice
  • 3 tbsp White Balsamic Vinegar
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • ¼ tsp Sugar
  • ½ tsp Dijon Mustard

Instructions
 

Endives

  • Clean, trim and thinly slice Endives and soak in cold water and add Salt and Lemon Juice.
  • Sauté Onion and Olive Oil. When onions are soft add endives and sauté 3-4 minutes.

Vinaigrette

  • Mix together Olive Oil Lemon Juice, White Balsamic Vinegar, Salt, Black Pepper, Sugar and Dijon Mustard.

Serve

  • Place Endives on platter and drizzle with Vinaigrette.
