Cod in Onion Sauce

Ingredients
  

  • ½ stick Butter
  • ½ cup Olive Oil
  • 3 cloves Minced Garlic
  • 3 Large Thinly Sliced Onions
  • Zest & Juice of One Lemon
  • ¼ cup White Wine
  • ½ cup Hot Water
  • ½ cup Catsup
  • 3-4 tbsp Hot Sauce
  • 2-3 lbs Cod (cut into 3" cubes)

Instructions
 

  • In sauté pan place Butter, Olive Oil, Garlic and Onions. When onions are translucent add Lemon Zest & Juice, White Wine, Hot Water, Catsup and Hot Sauce.
  • When sauce starts to thicken and onions are soft add Cod. Cook covered for 4-5 minutes. Add a little water if sauce is too thick.
