Mini Pancakes w/ Fresh Strawberries & Vermont Maple Syrup

Ingredients
- 1 cup Flour
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
- 1 Egg
- 1 tbsp Sugar
- 1 tbsp Pure Vanilla Extract
- 1 tbsp Oil
- 1 tbsp Melted Butter
- 1 cup Milk
- Fresh Strawberries (to serve)
- Vermont Maple Syrup (to serve)
Instructions
- In mixing bowl place Flour, Baking Powder, Baking Soda, Egg, Sugar, Pure Vanilla Extract, Oil, Melted Butter and Milk and blend. Let batter rest for 10 minutes before using.
- Make sure flat griddle is good and hot. Spray or butter surface before adding batter. Let pancakes cook until bubbles form and it is golden brown. Turn and cook 2 more minutes.
- Serve with Fresh Strawberries and Vermont Maple Syrup.
