Mini Pancakes w/ Fresh Strawberries & Vermont Maple Syrup

- 1 cup Flour
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
- 1 Egg
- 1 tbsp Sugar
- 1 tbsp Pure Vanilla Extract
- 1 tbsp Oil
- 1 tbsp Melted Butter
- 1 cup Milk
- Fresh Strawberries (to serve)
- Vermont Maple Syrup (to serve)
In mixing bowl place Flour, Baking Powder, Baking Soda, Egg, Sugar, Pure Vanilla Extract, Oil, Melted Butter and Milk and blend. Let batter rest for 10 minutes before using.
Make sure flat griddle is good and hot. Spray or butter surface before adding batter. Let pancakes cook until bubbles form and it is golden brown. Turn and cook 2 more minutes.
Serve with Fresh Strawberries and Vermont Maple Syrup.
