Sherry Demi-glace
This is a great sauce in which to toss cocktail meatballs for a tasty hors d'oeuvre.

Ingredients
- ¼ stick Butter
- 1 Finely Minced SHallot
- 1 clove Minced Garlic
- 2 tbsp Corn Starch
- 2 cup Sherry
- ¼ tsp Salt
- ¼ tsp Sugar
Instructions
- In saucepan place Butter, Shallot and Garlic. When shallots are soft add Corn Starch and stir constantly until slightly browned.
- Add Sherry, Salt and Sugar. Whisk until smooth then simmer until reduced to a shiny glaze.
