Golden Pork Purses

These little bundles of savory deliciousness are always a crowd pleaser. They are great either pan-seared or steamed.

Ingredients
  

Filling

  • 2 lbs Ground Pork
  • 1 Finely Diced Onion
  • 2 cloves Minced Garlic
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ½ tbsp Sugar
  • 1 tbsp Grated Ginger
  • 3 Red Pepper Flakes
  • 2 tbsp Soy Sauce
  • 1 Egg

Purses

  • Wonton Wrappers
  • ¼ cup Cold Water
  • ¼ tsp Turmeric

Serve

  • Sesame Garlic Dipping Sauce (prepared separately)

Instructions
 

Filling

  • In a mixing bowl place Ground Pork, Onion, Garlic, Salt, Black Pepper, Sugar, Grated Ginger, Red Pepper Flakes, Soy Sauce and Egg. Mix well to blend. Refrigerate for at least 1-2 hours.

Purses

  • To make purses place Wonton Wrappers on a very lightly floured work surface.
  • In a small bowl place Cold Water and Turmeric and blend well.
  • With a pastry brush lightly brush one side of wrapper with turmeric water and place a teaspoon of the pork mixture in center. Close the purse by making a circle around the outside of the wrapper surrounding the filling. Tie purse with a slice of chive or pinch closed.
  • To steam place purses in a bamboo steamer that has been sprayed with non-stick spray and set on a wok with boiling water. Steaming takes about 10 minutes.
  • To pan sear place purses in a medium hot sauté pan with 2 tbsp oil. Cook for 3 minutes or until bottoms are golden brown.  Carefully add ¼ cup water to pan, cover and continue cooking until wonton wrappers are soft and bottoms are crispy and browned.
  • Serve with Sesame-Garlic Dipping Sauce.
