Golden Pork Purses
These little bundles of savory deliciousness are always a crowd pleaser. They are great either pan-seared or steamed.

Ingredients
Filling
- 2 lbs Ground Pork
- 1 Finely Diced Onion
- 2 cloves Minced Garlic
- 1 tsp Salt
- ½ tsp Black Pepper
- ½ tbsp Sugar
- 1 tbsp Grated Ginger
- 3 Red Pepper Flakes
- 2 tbsp Soy Sauce
- 1 Egg
Purses
- Wonton Wrappers
- ¼ cup Cold Water
- ¼ tsp Turmeric
Serve
- Sesame Garlic Dipping Sauce (prepared separately)
Instructions
Filling
- In a mixing bowl place Ground Pork, Onion, Garlic, Salt, Black Pepper, Sugar, Grated Ginger, Red Pepper Flakes, Soy Sauce and Egg. Mix well to blend. Refrigerate for at least 1-2 hours.
Purses
- To make purses place Wonton Wrappers on a very lightly floured work surface.
- In a small bowl place Cold Water and Turmeric and blend well.
- With a pastry brush lightly brush one side of wrapper with turmeric water and place a teaspoon of the pork mixture in center. Close the purse by making a circle around the outside of the wrapper surrounding the filling. Tie purse with a slice of chive or pinch closed.
- To steam place purses in a bamboo steamer that has been sprayed with non-stick spray and set on a wok with boiling water. Steaming takes about 10 minutes.
- To pan sear place purses in a medium hot sauté pan with 2 tbsp oil. Cook for 3 minutes or until bottoms are golden brown. Carefully add ¼ cup water to pan, cover and continue cooking until wonton wrappers are soft and bottoms are crispy and browned.
- Serve with Sesame-Garlic Dipping Sauce.
