Sherry Demi-glace
This is a great sauce in which to toss cocktail meatballs for a tasty hors d'oeuvre.

- ¼ stick Butter
- 1 Finely Minced SHallot
- 1 clove Minced Garlic
- 2 tbsp Corn Starch
- 2 cup Sherry
- ¼ tsp Salt
- ¼ tsp Sugar
In saucepan place Butter, Shallot and Garlic. When shallots are soft add Corn Starch and stir constantly until slightly browned.
Add Sherry, Salt and Sugar. Whisk until smooth then simmer until reduced to a shiny glaze.
