Prosciutto Wrapped Figs w/ Olive Oil Drizzle

This Italian classic is a perfect treat before a large meal whenever figs are in season. Fresh figs have a short season but if you can't find fresh you can use dried mission figs. Dried are good but not the same as fresh figs.
A perfect hors d'oeuvre to serve with Prosecco (Italian champagne).

Ingredients
  

  • Fresh Figs (or dry mission figs)
  • Prosciutto (or Spanish Serrano Ham)
  • Olive Oil (to drizzle)

Instructions
 

  • Wash, dry and slice Fresh Figs in half or quarter depending on size.
  • Have the best Prosciutto (or Spanish Serrano Ham) you can find thinly sliced and remove any excess fat. Cut the meat lengthwise into 1-inch strips.
  • Wrap figs in the strips of meat and secure with a toothpick. Place on a serving platter and drizzle with the best olive oil you have.
  • Leave at room temperature until ready to serve.
