Prosciutto Wrapped Figs w/ Olive Oil Drizzle

This Italian classic is a perfect treat before a large meal whenever figs are in season. Fresh figs have a short season but if you can't find fresh you can use dried mission figs. Dried are good but not the same as fresh figs.

A perfect hors d'oeuvre to serve with Prosecco (Italian champagne).

Ingredients

Fresh Figs (or dry mission figs)
Prosciutto (or Spanish Serrano Ham)
Olive Oil (to drizzle)

Instructions

Wash, dry and slice Fresh Figs in half or quarter depending on size.
Have the best Prosciutto (or Spanish Serrano Ham) you can find thinly sliced and remove any excess fat. Cut the meat lengthwise into 1-inch strips.
Wrap figs in the strips of meat and secure with a toothpick. Place on a serving platter and drizzle with the best olive oil you have.
Leave at room temperature until ready to serve.
