Roasted Drunken Chicken
This is a very moist and tasty way to serve a whole chicken. Glazed carrots and smashed potatoes complement this chicken very well.

Ingredients
- 1 Whole Chicken
Marinade
- ½ cup Olive Oil
- 1 can Beer
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 Zest of 1 Lemon
- 1 Juice of 1 Lemon
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
Cook
- 1 can Additional Beer
Instructions
- Clean Whole Chicken.
Marinade
- Mix Olive Oil, 1 can of Beer, Salt, Black Pepper, Lemon Zest, Lemon Juice, Onion Powder, Garlic Powder and marinate chicken overnight.
Cook
- Place opened can of Additional Beer in a roasting pan and place the marinated chicken on the can of beer up the cavity of the bird. Pour the marinade over the chicken. Roast in a 400℉ oven for 10 minutes then reduce heat to 350℉ and continue roasting for 35-45 minutes or until chicken is golden brown and internal temp reaches 160℉. Let rest at least 10 minutes before slicing.
