Mussels Meuniere

This is really a Belgian dish that the French take credit for. This dish is truly a treat.

Soaking Time 1 hour
Total Time 1 hour 30 minutes

Servings 8

Ingredients
  

  • 5 lbs Mussels
  • ½ cup Salt
  • ¼ cup Cornmeal
  • Cold Water & Ice (to cover)
  • ½ stick Butter
  • ½ cup Olive Oil
  • 1 Large Diced Onion
  • 1 cup White Wine
  • ¼ cup Fresh Chopped Parsley

Instructions
 

  • Wash and clean Mussels.
  • Place mussels in a large bowl and add Salt, Cornmeal, Cold Water and Ice to cover. Let mussels soak for 30-60 minutes then rinse well before using.
  • While mussels are soaking prepare pot for mussels. In a large stock pot place Butter, Olive Oil and Onion.
  • When onions are soft add Cleaned Mussels and White Wine. Cover and put on medium high heat.
  • When mussels open add Parsley. Toss to combine.
  • Pour contents of pot into a large serving bowl and serve with crusty bread.
