Mussels Meuniere
This is really a Belgian dish that the French take credit for. This dish is truly a treat.

Ingredients
- 5 lbs Mussels
- ½ cup Salt
- ¼ cup Cornmeal
- Cold Water & Ice (to cover)
- ½ stick Butter
- ½ cup Olive Oil
- 1 Large Diced Onion
- 1 cup White Wine
- ¼ cup Fresh Chopped Parsley
Instructions
- Wash and clean Mussels.
- Place mussels in a large bowl and add Salt, Cornmeal, Cold Water and Ice to cover. Let mussels soak for 30-60 minutes then rinse well before using.
- While mussels are soaking prepare pot for mussels. In a large stock pot place Butter, Olive Oil and Onion.
- When onions are soft add Cleaned Mussels and White Wine. Cover and put on medium high heat.
- When mussels open add Parsley. Toss to combine.
- Pour contents of pot into a large serving bowl and serve with crusty bread.
