Mussels Meuniere
This is really a Belgian dish that the French take credit for. This dish is truly a treat.

- 5 lbs Mussels
- ½ cup Salt
- ¼ cup Cornmeal
- Cold Water & Ice (to cover)
- ½ stick Butter
- ½ cup Olive Oil
- 1 Large Diced Onion
- 1 cup White Wine
- ¼ cup Fresh Chopped Parsley
Wash and clean Mussels.
Place mussels in a large bowl and add Salt, Cornmeal, Cold Water and Ice to cover. Let mussels soak for 30-60 minutes then rinse well before using.
While mussels are soaking prepare pot for mussels. In a large stock pot place Butter, Olive Oil and Onion.
When onions are soft add Cleaned Mussels and White Wine. Cover and put on medium high heat.
When mussels open add Parsley. Toss to combine.
Pour contents of pot into a large serving bowl and serve with crusty bread.
