Chocolate Macadamia Nut Cookies

This is a rich cookie and I’m sure all your “big” kids will love them.

Ingredients
  

  • sticks Unsalted Butter (at room temperature)
  • cups Sugar
  • ½ cup Brown Sugar
  • 2 Lare Eggs
  • 2 Egg Yolks
  • 1 tbsp Vanilla Extract
  • 1 tsp Instant Espresso Powder
  • ¾ cup Dutch Cocoa Powder
  • 2 cups Flour
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • ½ cup Macadamia Nuts

Instructions
 

  • In a stand mixer cream Unsalted Butter, Sugar, Brown Sugar, Eggs, Egg Yolks, Vanilla Extract and Instant Espresso Powder.
  • In separate bowl sift together Dutch Cocoa Powder, Flour, Baking Soda and Salt.
  • Slowly add flour mixture to sugar mixture then add Macadamia Nuts. Gently fold to blend nuts into batter. Let chill 20-30 minutes in refrigerator.
  • Scoop onto a parchment-lined cookie sheet and bake in a 350℉ oven for 12-15 minutes. Let cool before serving.
