Chocolate Macadamia Nut Cookies

Ingredients
- 2½ sticks Unsalted Butter (at room temperature)
- 1½ cups Sugar
- ½ cup Brown Sugar
- 2 Lare Eggs
- 2 Egg Yolks
- 1 tbsp Vanilla Extract
- 1 tsp Instant Espresso Powder
- ¾ cup Dutch Cocoa Powder
- 2 cups Flour
- 1 tsp Baking Soda
- ½ tsp Salt
- ½ cup Macadamia Nuts
Instructions
- In a stand mixer cream Unsalted Butter, Sugar, Brown Sugar, Eggs, Egg Yolks, Vanilla Extract and Instant Espresso Powder.
- In separate bowl sift together Dutch Cocoa Powder, Flour, Baking Soda and Salt.
- Slowly add flour mixture to sugar mixture then add Macadamia Nuts. Gently fold to blend nuts into batter. Let chill 20-30 minutes in refrigerator.
- Scoop onto a parchment-lined cookie sheet and bake in a 350℉ oven for 12-15 minutes. Let cool before serving.
