Green Curry Shrimp

This is a mildly spicy curry that is great as a vegetarian dish with or without tofu or with shrimp or chicken. Serve with white or brown rice.

Ingredients
  

  • ¼ cup Olive Oil
  • 2 Onions (sliced into thin strips)
  • 1 clove Garlic
  • 1 piece Fresh Ginger
  • 1 Zucchini (cut into ½-inch circles)
  • 1 Yellow Squash (cut into ½-inch circles)
  • ½ lb Fresh Green Beans (cut into 2-inch pieces)
  • 1-2 tbsp Green Curry Paste
  • 1 can Coconut Milk
  • 2 cups Vegetable Stock
  • 2 lbs Shrimp (cleaned and deveined)

Instructions
 

  • In saucepan place Olive Oil, Onions, Garlic and Ginger.
  • When Onions are soft and translucent add Zucchini, Yellow Squash and Green Beans and cook for 3-5 minutes.
  • Add Green Curry Paste and cook for 2-3 minutes.
  • Add Coconut Milk and Vegetable Stock and bring to a gentle boil.
  • Add Shrimp. When shrimp turns pink remove from heat and cover until ready to serve.
