Lemon Orzo

This rice-shaped pasta is a wonderful side dish served warm and delicious as a cold salad.

Cook Time 15 minutes
Total Time 25 minutes

Servings 8

Ingredients
  

  • 2 qts Water
  • 2 qts Vegetable Stock
  • ½ cup Lemon Juice
  • 2 tbsp Salt
  • 2 lbs Orzo (you will want leftovers)
  • ½ cup Olive Oil
  • ½ tbsp Additional Salt
  • ½ tbsp Crushed Black Pepper
  • 1 tbsp Sugar (or agave)
  • Zest & Juice of Two Lemons
  • ¼ cup Chopped Fresh Flat Leaf Parsley

Instructions
 

  • In saucepan bring to a boil Water, Vegetable Stock, Lemon Juice and Salt. Add Orzo and cook until tender. Drain but DO NOT rinse.
  • Place cooked orzo in mixing bowl and add Olive Oil, Salt, Black Pepper, Sugar (or agave), Lemon Zest, Lemon Juice, and Parsley. Toss well.
  • Serve warm as a side or chill and serve as a cold salad.
