Lemon Orzo
This rice-shaped pasta is a wonderful side dish served warm and delicious as a cold salad.

Ingredients
- 2 qts Water
- 2 qts Vegetable Stock
- ½ cup Lemon Juice
- 2 tbsp Salt
- 2 lbs Orzo (you will want leftovers)
- ½ cup Olive Oil
- ½ tbsp Additional Salt
- ½ tbsp Crushed Black Pepper
- 1 tbsp Sugar (or agave)
- Zest & Juice of Two Lemons
- ¼ cup Chopped Fresh Flat Leaf Parsley
Instructions
- In saucepan bring to a boil Water, Vegetable Stock, Lemon Juice and Salt. Add Orzo and cook until tender. Drain but DO NOT rinse.
- Place cooked orzo in mixing bowl and add Olive Oil, Salt, Black Pepper, Sugar (or agave), Lemon Zest, Lemon Juice, and Parsley. Toss well.
- Serve warm as a side or chill and serve as a cold salad.
