Water

Vegetable Stock

Lemon Juice

Salt

Orzo
(you will want leftovers)

cup
Olive Oil

tbsp
Additional Salt

Crushed Black Pepper

Sugar
(or agave)
Zest & Juice of Two Lemons

cup
Chopped Fresh Flat Leaf Parsley
Instructions
In saucepan bring to a boil Water, Vegetable Stock, Lemon Juice and Salt. Add Orzo and cook until tender. Drain but DO NOT rinse.
Place cooked orzo in mixing bowl and add Olive Oil, Salt, Black Pepper, Sugar (or agave), Lemon Zest, Lemon Juice, and Parsley. Toss well.
Serve warm as a side or chill and serve as a cold salad.
