Biscotti

A crunchy Italian biscuit that is equally at home with a cup of coffee or a glass of red wine.

Ingredients
  

  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 cups Flour
  • ½ tsp Cinnamon
  • 1 tsp Baking Powder
  • 3 tsp Softened Butter
  • 2 Beaten Eggs
  • 3 tbsp Pure Vanilla Extract
  • 3 cups Slivered Almonds (or 2 cups pistachio nuts + 2 cups dried cranberries)
  • Egg Wash

Instructions
 

  • Blend Sugar, Brown Sugar, Flour, Cinnamon, Baking Powder and Softened Butter.
  • Add Beaten Eggs and Pure Vanilla Extract. Blend.
  • Add either Slivered Almonds OR Pistachio Nuts and Dried Cranberries and blend.
  • Blend and roll into 2-inch logs. Place on baking sheet – flatten slightly with a damp hand – brush with Egg Wash and bake in a 350℉ oven for 25-30 minutes. Let cool then slice logs into ¼-inch wide diagonal slices and place on baking sheet and bake in a 250℉ oven for 10-15 minutes or until desired texture.
