Biscotti
A crunchy Italian biscuit that is equally at home with a cup of coffee or a glass of red wine.

- 1 cup Sugar
- 1 cup Brown Sugar
- 2 cups Flour
- ½ tsp Cinnamon
- 1 tsp Baking Powder
- 3 tsp Softened Butter
- 2 Beaten Eggs
- 3 tbsp Pure Vanilla Extract
- 3 cups Slivered Almonds (or 2 cups pistachio nuts + 2 cups dried cranberries)
- Egg Wash
Blend Sugar, Brown Sugar, Flour, Cinnamon, Baking Powder and Softened Butter.
Add Beaten Eggs and Pure Vanilla Extract. Blend.
Add either Slivered Almonds OR Pistachio Nuts and Dried Cranberries and blend.
Blend and roll into 2-inch logs. Place on baking sheet – flatten slightly with a damp hand – brush with Egg Wash and bake in a 350℉ oven for 25-30 minutes. Let cool then slice logs into ¼-inch wide diagonal slices and place on baking sheet and bake in a 250℉ oven for 10-15 minutes or until desired texture.
