Red, White & Blue Potato Salad
A perfect side dish for your 4th of July get-together. Most supermarkets have these potatoes. They are called "new" potatoes or baby bliss and come in red and white and often available in the summer in blue (a purple-like blue). Ask your produce person if you don’t see them.

Ingredients
- 1 bag Red Potatoes (small bag about 2 lbs)
- 1 bag White Potatoes (small bag about 2 lbs)
- 1 bag Blue Potatoes (small bag about 2 lbs)
Dressing
- ½ cup Hot Water
- ¼ cup White Vinegar
- 3 tbsp Sugar
- 2 tbsp Mustard
- 1 tsp Onion Powder
- ½ tsp Garlic Powder
- 2 tbsp Dried Dill
- 1½ cups Hellmann's Mayonnaise
- ½ tsp Salt
- 1 tsp Black Pepper
Instructions
- Wash and cut in half Red, White and Blue Potatoes. Place in a pot of cold salted water and bring to a boil. Turn off heat, cover and let rest for 10 minutes or until potatoes are fork tender. Drain and cool.
Dressing
- Mix together Hot Water, White Vinegar, Sugar, Mustard, Onion Powder, Garlic Powder, Dill, Mayonnaise, Salt and Black Pepper. Blend well and pour over cooked potatoes.
- Refrigerate at least 2-3 hours to chill and let flavors blend.
