Basil-Pecorino Stuffed Pork Tenderloin

Ingredients
- Baby Pork Tenderloin (cleaned, trimmed and butterflied)
- ½ cup Pesto Sauce (made separately)
- ½ cup Shaved Pecorino Romano Cheese
- Zest & Juice of One Lemon
- ¼ cup Additional Pesto
- ¼ cup Breadcrumbs (panko is great here)
Instructions
- Clean, trim and butterfly Baby Pork Tenderloin to a rectangular shape.
- Spread tenderloin with Pesto. Cover the pesto layer with Pecorino Romano Cheese and Lemon Zest and Lemon Juice.
- Roll tenderloin and place seam side down on roasting pan. Spread outside of tenderloin with additional ¼ cup of Pesto. Sprinkle with Breadcrumbs.
- Roast in a 400℉ oven for 35-40 minutes or until browned and internal temperature reads 155-160℉. Let rest 10 minutes before slicing.
