Poached Salmon w/ Sauce Vert & Micro Greens Salad
This is a very flavorful way to prepare salmon. Even people who don't like salmon have enjoyed this dish.

Ingredients
- Wild Salmon (whole side or portions about 3" wide)
- ½ stick Butter
- ¼ cup Brown Sugar
- 2 tbsp White Rice Vinegar
- Zest & Juice of One Fresh Lemon
- 2 tbsp Dill (dry works great here)
- 1 pinch Salt
- ½ tsp Crushed Black Pepper
- 1 tbsp Onion Powder
- 1 Lemon (sliced for garnish)
- Additional Fresh Dill (for garnish)
- Sauce Vert (prepared separately)
- Micro Greens
Instructions
- Rinse with cold water and check for bones down the center of the Whole Side of Wild Salmon.
- Make Marinade. Melt Butter. Add Brown Sugar, White Rice Vinegar, Lemon Zest, Lemon Juice, Dill, Salt, Black Pepper and Onion Powder. Pour marinade over salmon and refrigerate for at least 1 hour.
- Bake salmon in 400℉ oven for approximately 20 minutes or until salmon is slightly browned around the edges. Let rest 5 minutes before serving.
- Serve garnished with slice of lemon and sprig of fresh dill and Sauce Vert on the side and a side of Micro Greens.
