Poached Salmon w/ Sauce Vert & Micro Greens Salad
This is a very flavorful way to prepare salmon. Even people who don't like salmon have enjoyed this dish.

- Wild Salmon (whole side or portions about 3" wide)
- ½ stick Butter
- ¼ cup Brown Sugar
- 2 tbsp White Rice Vinegar
- Zest & Juice of One Fresh Lemon
- 2 tbsp Dill (dry works great here)
- 1 pinch Salt
- ½ tsp Crushed Black Pepper
- 1 tbsp Onion Powder
- 1 Lemon (sliced for garnish)
- Additional Fresh Dill (for garnish)
- Sauce Vert (prepared separately)
- Micro Greens
Rinse with cold water and check for bones down the center of the Whole Side of Wild Salmon.
Make Marinade. Melt Butter. Add Brown Sugar, White Rice Vinegar, Lemon Zest, Lemon Juice, Dill, Salt, Black Pepper and Onion Powder. Pour marinade over salmon and refrigerate for at least 1 hour.
Bake salmon in 400℉ oven for approximately 20 minutes or until salmon is slightly browned around the edges. Let rest 5 minutes before serving.
Serve garnished with slice of lemon and sprig of fresh dill and Sauce Vert on the side and a side of Micro Greens.
