Ingredients
- 2 doz Oysters
- ½ stick Butter
- 2 Finely Diced Shallots
- 2 cups Chopped Spinach
- ½ cup Heavy Cream
- ½ tsp Salt
- ½ tsp Crushed Black Pepper
- Panko Breadcrumbs (¼ tsp per oyster)
Instructions
- Soak Oysters in cold salty water. Rinse well and carefully open leaving all the meat on one side of the shell.
- Sauté Butter and Shallots until soft. Add Spinach, Heavy Cream, Salt and Black Pepper.
- When spinach is wilted and cream is reduced spoon a little on each oyster. Sprinkle oysters with Panko Breadcrumbs.
- Place on sheet pan and under the broiler for 2 minutes. Serve hot.
