Oysters Rockefeller

Ingredients
  

  • 2 doz Oysters
  • ½ stick Butter
  • 2 Finely Diced Shallots
  • 2 cups Chopped Spinach
  • ½ cup Heavy Cream
  • ½ tsp Salt
  • ½ tsp Crushed Black Pepper
  • Panko Breadcrumbs (¼ tsp per oyster)

Instructions
 

  • Soak Oysters in cold salty water. Rinse well and carefully open leaving all the meat on one side of the shell.
  • Sauté Butter and Shallots until soft. Add Spinach, Heavy Cream, Salt and Black Pepper.
  • When spinach is wilted and cream is reduced spoon a little on each oyster. Sprinkle oysters with Panko Breadcrumbs.
  • Place on sheet pan and under the broiler for 2 minutes. Serve hot.
