Finely Diced Shallots

Chopped Spinach

Heavy Cream

Crushed Black Pepper
Panko Breadcrumbs
(¼ tsp per oyster)
Instructions
Soak Oysters in cold salty water. Rinse well and carefully open leaving all the meat on one side of the shell.
Sauté Butter and Shallots until soft. Add Spinach, Heavy Cream, Salt and Black Pepper.
When spinach is wilted and cream is reduced spoon a little on each oyster. Sprinkle oysters with Panko Breadcrumbs.
Place on sheet pan and under the broiler for 2 minutes. Serve hot.
