Corn Fritters
This is a sinfully delicious item that you just have to make every now and again.

Ingredients
- 2 cups Flour
- 2 Eggs
- 2 cups Milk
- 2 tbsp Corn Oil
- 2 tsp Salt
- 2 tbsp Sugar
- 2 tsp Baking Powder
- 1 can White Corn (drained)
- 1 can Creamed Corn
- ½ can Beer
- 2 tbsp Pure Maple Syrup
- 2 inches Additional Corn Oil (for frying pan)
Instructions
- Make batter. Mix together Flour, Eggs, Milk, Corn Oil, Salt, Sugar and Baking Powder and blend.
- Add White Corn, Creamed Corn, Beer and Pure Maple Syrup.
- Let batter rest for 20 minutes.
- Heat a skillet with 2" of Additional Corn Oil. Bring oil to medium high heat. Spoon batter into frying pan and cook 1-2 minutes on each side or until fritter is golden brown.
- Serve with applesauce and/or sour cream or just as is.
Notes
For a southwestern twist add diced peppers and jalapeños to the batter.
