Corn Fritters

This is a sinfully delicious item that you just have to make every now and again.

Ingredients
  

  • 2 cups Flour
  • 2 Eggs
  • 2 cups Milk
  • 2 tbsp Corn Oil
  • 2 tsp Salt
  • 2 tbsp Sugar
  • 2 tsp Baking Powder
  • 1 can White Corn (drained)
  • 1 can Creamed Corn
  • ½ can Beer
  • 2 tbsp Pure Maple Syrup
  • 2 inches Additional Corn Oil (for frying pan)

Instructions
 

  • Make batter. Mix together Flour, Eggs, Milk, Corn Oil, Salt, Sugar and Baking Powder and blend.
  • Add White Corn, Creamed Corn, Beer and Pure Maple Syrup.
  • Let batter rest for 20 minutes.
  • Heat a skillet with 2" of Additional Corn Oil. Bring oil to medium high heat. Spoon batter into frying pan and cook 1-2 minutes on each side or until fritter is golden brown.
  • Serve with applesauce and/or sour cream or just as is.

Notes

For a southwestern twist add diced peppers and jalapeños to the batter.
