Baby Green Salad & Lime Vinaigrette
A light and wonderful salad, these baby greens go well with the delicate lime dressing.

Ingredients
- Arugula (washed and dried)
- Spinach (washed and dried)
- Flat-leaf Italian Parsley (washed and dried)
- ¼ cup Olive Oil
- Zest & Juice of Two Limes
- 1 Minced Shallot (small)
- 1 tbsp White Rice Vinegar
- ½ tsp Sugar
- ½ tsp Salt
- ½ tsp Crushed Black Pepper
Instructions
- Wash and dry desired greens. (Arugula, Baby Spinach and Flat-leaf Italian Parsley make a great team).
- In mixing bowl place Olive Oil, Lime Zest, Lime Juice, Shallot, Garlic, White Rice Vinegar, Sugar, Salt and Black Pepper.
- Mix well and drizzle over greens and serve with additional wedges of lime.
