Baby Green Salad & Lime Vinaigrette
A light and wonderful salad, these baby greens go well with the delicate lime dressing.

- Arugula (washed and dried)
- Spinach (washed and dried)
- Flat-leaf Italian Parsley (washed and dried)
- ¼ cup Olive Oil
- Zest & Juice of Two Limes
- 1 Minced Shallot (small)
- 1 tbsp White Rice Vinegar
- ½ tsp Sugar
- ½ tsp Salt
- ½ tsp Crushed Black Pepper
Wash and dry desired greens. (Arugula, Baby Spinach and Flat-leaf Italian Parsley make a great team).
In mixing bowl place Olive Oil, Lime Zest, Lime Juice, Shallot, Garlic, White Rice Vinegar, Sugar, Salt and Black Pepper.
Mix well and drizzle over greens and serve with additional wedges of lime.
