Baby Green Salad & Lime Vinaigrette

A light and wonderful salad, these baby greens go well with the delicate lime dressing.

Ingredients
  

  • Arugula (washed and dried)
  • Spinach (washed and dried)
  • Flat-leaf Italian Parsley (washed and dried)
  • ¼ cup Olive Oil
  • Zest & Juice of Two Limes
  • 1 Minced Shallot (small)
  • 1 tbsp White Rice Vinegar
  • ½ tsp Sugar
  • ½ tsp Salt
  • ½ tsp Crushed Black Pepper

Instructions
 

  • Wash and dry desired greens. (Arugula, Baby Spinach and Flat-leaf Italian Parsley make a great team).
  • In mixing bowl place Olive Oil, Lime Zest, Lime Juice, Shallot, Garlic, White Rice Vinegar, Sugar, Salt and Black Pepper.
  • Mix well and drizzle over greens and serve with additional wedges of lime.
