Rice Pilaf

Ingredients
  

  • ¼ cup Olive Oil
  • 1 Diced Onion
  • 2 cloves Minced Garlic
  • 1 cup Orzo Pasta
  • 2 cups Rice
  • 5 cups Vegetable Stock (you can use chicken stock also)
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 2 tbsp Parsley Flakes

Instructions
 

  • Sauté Olive Oil, Onion and Minced Garlic until Onions are just soft (about 3 minutes).
  • Add Orzo Pasta and let pasta sauté for 3-5 minutes and let it get a little toasty and nutty brown.
  • Add Rice and sauté for 3 minutes.
  • Add Vegetable (or chicken) Stock, Salt, Black Pepper and Parsley Flakes.
  • Cover and simmer until almost all the liquid is absorbed. Fluff with fork and serve.
