Rice Pilaf

Ingredients
- ¼ cup Olive Oil
- 1 Diced Onion
- 2 cloves Minced Garlic
- 1 cup Orzo Pasta
- 2 cups Rice
- 5 cups Vegetable Stock (you can use chicken stock also)
- 1 tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Parsley Flakes
Instructions
- Sauté Olive Oil, Onion and Minced Garlic until Onions are just soft (about 3 minutes).
- Add Orzo Pasta and let pasta sauté for 3-5 minutes and let it get a little toasty and nutty brown.
- Add Rice and sauté for 3 minutes.
- Add Vegetable (or chicken) Stock, Salt, Black Pepper and Parsley Flakes.
- Cover and simmer until almost all the liquid is absorbed. Fluff with fork and serve.
