Braised Radicchio Salad w/ Pickled Cucumber

Ingredients
  

  • 2 heads Radicchio (washed and cut into 2" wedges)
  • 2 cups Water
  • 1 cup Sugar
  • 1 clove Garlic
  • 2 English Cucumbers (thinly sliced)
  • Olive Oil (drizzle)
  • 1 Pinch Salt
  • 1 Pinch Black Pepper
  • Zest & Juice of One Lemon

Instructions
 

  • Wash and cut Radicchio into 2" wedges and place on cookie sheet pan and drizzle with Olive Oil and Lightly Salt. Place in a 400℉ oven for 8-10 minutes until lettuce is just wilted. Place radicchio on a serving platter and set aside.
  • Bring 2 cups of water to a boil and add Sugar and Garlic. Let simmer for 5 minutes then remove from heat and let cool to room temperature.
  • Add Cucumbers to sugar/water mixture and cool in refrigerator for 1-2 hours.
  • Drain cucumber and add to roasted radicchio and season with a drizzle of Olive Oil, Salt, Pepper, and Lemon Zest and Juice.
