Braised Radicchio Salad w/ Pickled Cucumber

Ingredients
- 2 heads Radicchio (washed and cut into 2" wedges)
- 2 cups Water
- 1 cup Sugar
- 1 clove Garlic
- 2 English Cucumbers (thinly sliced)
- Olive Oil (drizzle)
- 1 Pinch Salt
- 1 Pinch Black Pepper
- Zest & Juice of One Lemon
Instructions
- Wash and cut Radicchio into 2" wedges and place on cookie sheet pan and drizzle with Olive Oil and Lightly Salt. Place in a 400℉ oven for 8-10 minutes until lettuce is just wilted. Place radicchio on a serving platter and set aside.
- Bring 2 cups of water to a boil and add Sugar and Garlic. Let simmer for 5 minutes then remove from heat and let cool to room temperature.
- Add Cucumbers to sugar/water mixture and cool in refrigerator for 1-2 hours.
- Drain cucumber and add to roasted radicchio and season with a drizzle of Olive Oil, Salt, Pepper, and Lemon Zest and Juice.
