Wash and cut Radicchio into 2" wedges and place on cookie sheet pan and drizzle with Olive Oil and Lightly Salt. Place in a 400℉ oven for 8-10 minutes until lettuce is just wilted. Place radicchio on a serving platter and set aside.
Bring 2 cups of water to a boil and add Sugar and Garlic. Let simmer for 5 minutes then remove from heat and let cool to room temperature.
Add Cucumbers to sugar/water mixture and cool in refrigerator for 1-2 hours.
Drain cucumber and add to roasted radicchio and season with a drizzle of Olive Oil, Salt, Pepper, and Lemon Zest and Juice.
