Roasted Potatoes w/ Peppers & Onions
These roasted treats are certainly great with bacon & eggs but are just as tasty as a side with a great hamburger instead of French fries.

Ingredients
- 5 lbs Yukon Gold Potatoes
- 1 Finely Diced Onion
- ½ cup Catsup
- 1 tbsp Paprika
- ½ tbsp Salt
- ¼ tbsp Crushed Black Pepper
- 1 tbsp Sugar
- 2 tbsp Hot Sauce (your choice of brand)
- 3 tbsp Olive Oil
- 1 Finely Diced Pepper (green, red, yellow, orange or a little of each at your option)
Instructions
The Potatoes
- Peel-wash-dice into 1" cubes.
- Place in saucepan and cover with cold, lightly salted water. Bring to a boil then drain potatoes which should be slightly firm to a fork.
Mixing Bowl
- Place cooked potatoes in a mixing bowl and add onion, catsup, paprika, salt, crushed black pepper, sugar, hot sauce, olive oil and pepper.
- Toss well to coat potatoes and place in oiled baking dish.
- Bake in oven for 25-30 minutes at 350℉ until potatoes are golden brown.
