Roasted Potatoes w/ Peppers & Onions
These roasted treats are certainly great with bacon & eggs but are just as tasty as a side with a great hamburger instead of French fries.

- 5 lbs Yukon Gold Potatoes
- 1 Finely Diced Onion
- ½ cup Catsup
- 1 tbsp Paprika
- ½ tbsp Salt
- ¼ tbsp Crushed Black Pepper
- 1 tbsp Sugar
- 2 tbsp Hot Sauce (your choice of brand)
- 3 tbsp Olive Oil
- 1 Finely Diced Pepper (green, red, yellow, orange or a little of each at your option)
The Potatoes
Peel-wash-dice into 1" cubes.
Place in saucepan and cover with cold, lightly salted water. Bring to a boil then drain potatoes which should be slightly firm to a fork.
Mixing Bowl
Place cooked potatoes in a mixing bowl and add onion, catsup, paprika, salt, crushed black pepper, sugar, hot sauce, olive oil and pepper.
Toss well to coat potatoes and place in oiled baking dish.
Bake in oven for 25-30 minutes at 350℉ until potatoes are golden brown.
