Roasted Potatoes w/ Peppers & Onions

These roasted treats are certainly great with bacon & eggs but are just as tasty as a side with a great hamburger instead of French fries.

Ingredients
  

  • 5 lbs Yukon Gold Potatoes
  • 1 Finely Diced Onion
  • ½ cup Catsup
  • 1 tbsp Paprika
  • ½ tbsp Salt
  • ¼ tbsp Crushed Black Pepper
  • 1 tbsp Sugar
  • 2 tbsp Hot Sauce (your choice of brand)
  • 3 tbsp Olive Oil
  • 1 Finely Diced Pepper (green, red, yellow, orange or a little of each at your option)

Instructions
 

The Potatoes

  • Peel-wash-dice into 1" cubes.
  • Place in saucepan and cover with cold, lightly salted water. Bring to a boil then drain potatoes which should be slightly firm to a fork.

Mixing Bowl

  • Place cooked potatoes in a mixing bowl and add onion, catsup, paprika, salt, crushed black pepper, sugar, hot sauce, olive oil and pepper.
  • Toss well to coat potatoes and place in oiled baking dish.
  • Bake in oven for 25-30 minutes at 350℉ until potatoes are golden brown.
