
Baby French Lamb Chops w/ Mint Marinade
Also known as lollipops these are a very delicious hors d'oeuvre. This was one of our most popular marinades.

Ingredients
- Rack of Baby Lamb Chops
- 1 cup Olive Oil
- ¼ cup White Rice Vinegar
- 2 cloves Garlic
- ½ Onion (small onion)
- 3 tbsp Fresh Mint (or 1½ tbsp dried mint)
- 2 tbsp Fresh Rosemary (or 1 tbsp dried rosemary)
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tbsp Sugar
Instructions
- Cut into baby chop and French clean the bone.
- Prepare marinade placing Olive Oil, White Rice Vinegar, Garlic, Onion, Fresh Mint, Fresh Rosemary, Salt, Black Pepper and Sugar in a processor and blend. If using Dried Rosemary run processor an extra 2 minutes to ensure this dried herb is crushed.
- Marinate meat only (stand up in container so bones are dry and clean) for a minimum of 2 hours.
- Place marinated chops on hot grill or under broiler for 2 minutes each side.
