Ingredients
- 3 lbs Quinoa Pasta (quinoa pasta of your choice)
- 8-10 Plum Tomatoes (halved or quartered depending on size)
- ¼ cup Olive Oil
- 1 tsp Salt
- ½ tsp Black Pepper
- ½ tsp Garlic Powder
- 1 bunch Asparagus
- ¼ cup Additional Olive Oil
- Zest & Juice of One Lemon
- ½ tsp Salt
- ¼ tsp Black Pepper
- Fresh Basil Leaves
- Vegan Parmesan Cheese (optional)
Instructions
- Cook Quinoa Pasta according to package directions.
- Place Tomatoes on roasting pan and season with Olive Oil, Salt, Black Pepper and Garlic Powder. Roast in 375℉ oven for 20-30 minutes.
- Blanch Asparagus. With a potato peeler shave chilled asparagus.
- Into hot pasta toss roasted tomatoes and shaved asparagus.
- Add Additional Olive Oil, Lemon Zest, Lemon Juice, Salt, Black Pepper and optional Vegan Parmesan Cheese. Toss and serve.
