Quinoa Pasta with Roasted Tomatoes & Shaved Asparagus

Ingredients
  

  • 3 lbs Quinoa Pasta (quinoa pasta of your choice)
  • 8-10 Plum Tomatoes (halved or quartered depending on size)
  • ¼ cup Olive Oil
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Garlic Powder
  • 1 bunch Asparagus
  • ¼ cup Additional Olive Oil
  • Zest & Juice of One Lemon
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • Fresh Basil Leaves
  • Vegan Parmesan Cheese (optional)

Instructions
 

  • Cook Quinoa Pasta according to package directions.
  • Place Tomatoes on roasting pan and season with Olive Oil, Salt, Black Pepper and Garlic Powder. Roast in 375℉ oven for 20-30 minutes.
  • Blanch Asparagus. With a potato peeler shave chilled asparagus.
  • Into hot pasta toss roasted tomatoes and shaved asparagus.
  • Add Additional Olive Oil, Lemon Zest, Lemon Juice, Salt, Black Pepper and optional Vegan Parmesan Cheese. Toss and serve.
