Chicken Salad on Endive

Your guests will never guess that this isn't chicken.

Ingredients
  

  • 1 or 2 boxes Soy Chicken Strips (available in the produce section of most supermarket)s
  • ½ cup Vegenaise (available in some supermarkets but most health food stores)
  • 1 tsp Dijon Mustard
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ tsp Dried Tarragon
  • ½ cup White Grapes (cut in half)
  • 1 Diced Apple
  • 2-3 stalks Finely Diced Celery
  • 2-3 Diced Radishes
  • Endive Leaves

Instructions
 

  • Rough chop Soy Chicken Strips and place in mixing bowl.
  • Add Vegenaise, Dijon Mustard, Salt, Black Pepper, Onion Powder, Garlic Powder, Dried Tarragon, White Grapes, Apple, Celery and Radishes and gently mix to blend.
  • Chill at least 1 hour before serving a spoonful of chicken salad on a washed Endive Leaf.
