Chicken Salad on Endive

Ingredients
- 1 or 2 boxes Soy Chicken Strips (available in the produce section of most supermarket)s
- ½ cup Vegenaise (available in some supermarkets but most health food stores)
- 1 tsp Dijon Mustard
- ½ tsp Salt
- ½ tsp Black Pepper
- ½ tsp Onion Powder
- ½ tsp Garlic Powder
- ½ tsp Dried Tarragon
- ½ cup White Grapes (cut in half)
- 1 Diced Apple
- 2-3 stalks Finely Diced Celery
- 2-3 Diced Radishes
- Endive Leaves
Instructions
- Rough chop Soy Chicken Strips and place in mixing bowl.
- Add Vegenaise, Dijon Mustard, Salt, Black Pepper, Onion Powder, Garlic Powder, Dried Tarragon, White Grapes, Apple, Celery and Radishes and gently mix to blend.
- Chill at least 1 hour before serving a spoonful of chicken salad on a washed Endive Leaf.
