Roast Pork w/ Sherried Mushrooms

Ingredients
Roast Pork
- 1½-2 lbs Tenderloin of Pork
- Salt (to season pork)
- Pepper (to season pork)
- 2 tbsp Olive Oil
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
Sauce
- ¼ cup Spanish Olive Oil (Goya brand which is readily available has a lovely and smooth flavor)
- 1 Large Finely Diced Onion
- 2 cloves Garlic
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 tbsp Sugar
- 3 tbsp Flour
- 2 lbs Sliced Mushrooms
- 1 cup Sherry
Instructions
Roast Pork
- Clean and trim Tenderloin of Pork and season with Salt and Pepper. Let rest for 5 minutes.
- Place pork in roasting pan and add Olive Oil, Onion Powder and Garlic Powder. Roast pork in a 400℉ oven for 35-40 minutes or until internal temperature is 155℉ and then let rest for 10 minutes.
Sauce
- While roast is cooking make the sauce. In sauté pan place Spanish Olive Oil, Onion, Garlic, Salt, Black Pepper and Sugar.
- When onions are soft and slightly browned add Flour, Mushrooms and Sherry and cook until mushrooms are soft and browned.
