Roast Pork w/ Sherried Mushrooms

Ingredients
  

Roast Pork

  • 1½-2 lbs Tenderloin of Pork
  • Salt (to season pork)
  • Pepper (to season pork)
  • 2 tbsp Olive Oil
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Sauce

  • ¼ cup Spanish Olive Oil (Goya brand which is readily available has a lovely and smooth flavor)
  • 1 Large Finely Diced Onion
  • 2 cloves Garlic
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Sugar
  • 3 tbsp Flour
  • 2 lbs Sliced Mushrooms
  • 1 cup Sherry

Instructions
 

Roast Pork

  • Clean and trim Tenderloin of Pork and season with Salt and Pepper. Let rest for 5 minutes.
  • Place pork in roasting pan and add Olive Oil, Onion Powder and Garlic Powder. Roast pork in a 400℉ oven for 35-40 minutes or until internal temperature is 155℉ and then let rest for 10 minutes.

Sauce

  • While roast is cooking make the sauce. In sauté pan place Spanish Olive Oil, Onion, Garlic, Salt, Black Pepper and Sugar.
  • When onions are soft and slightly browned add Flour, Mushrooms and Sherry and cook until mushrooms are soft and browned.
