Sopa de Ajo (Spanish Garlic Soup)
This is one of the best soups ever and so quick to make.

Ingredients
- 1 loaf Italian Bread (cut into 1-2" cubes)
- Olive Oil (drizzle)
- Salt (drizzle)
- ¼ cup Additional Olive OIl
- 10 cloves Thinly Sliced Garlic
- 2 tbsp Paprika
- 1 tbsp Onion Powder
- 6-8 cups Chicken Stock (you can use store bought if you don't have homemade stock on hand)
- 8 Eggs
Instructions
- Place cubes of Bread on a parchment lined baking sheet and drizzle with Olive Oil and Salt. Place in a 400℉ oven for 3-5 minutes or until golden brown and crispy. Remove from oven and set aside.
- In a large saucepan place Additional Olive Oil and Garlic. When garlic slices just start to toast add Paprika and Onion Powder.
- Stir to toast spices then add Chicken Stock. Bring to a boil and reduce heat. Taste to adjust seasoning.
- Place a handful of toasted bread in an individual oven-safe crock and fill with garlic soup. Top each crock with 1 raw Egg and place in a 375℉ oven for 3-5 minutes or until egg white sets and yolk is set but not hard.
