Roasted Fingerling Potatoes

I like to use fingerling potatoes for this dish but you can use just about any potato you like.

Ingredients
  

  • 5 lbs Fingerling Potatoes (washed, dried and cut in half lengthwise)
  • ¼ cup Olive Oil
  • ½ tbsp Salt
  • ½ tbsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 2 tbsp Parsley Flakes
  • 2 tbsp Dried Dill Weed
  • 1 tbsp Dried Tarragon
  • ½ tbsp Sugar
  • 3 Fresh Sage Leaves
  • Whole Cloves of Garlic

Instructions
 

  • Wash, dry and cut Potatoes in half lengthwise and place in mixing bowl.
  • Add Olive Oil, Salt, Black Pepper, Onion Powder, Garlic Powder, Parsley Flakes, Dill Weed, Tarragon, Sugar, Sage Leaves and Garlic.
  • Place seasoned potatoes in baking dish and roast in a 400℉ oven for 30 minutes or until potatoes are golden brown but soft and fluffy inside. Remove whole garlic cloves, which will be soft and caramelized, and mash with a fork to serve with meat.

Notes

If serving these with a rack of lamb start the potatoes in the oven and about ten minutes in add the lamb and both should be ready at the same time - a perfectly timed entrée.
