Roasted Fingerling Potatoes

I like to use fingerling potatoes for this dish but you can use just about any potato you like.

Ingredients

5 lbs Fingerling Potatoes (washed, dried and cut in half lengthwise)
¼ cup Olive Oil
½ tbsp Salt
½ tbsp Black Pepper
1 tsp Onion Powder
1 tsp Garlic Powder
2 tbsp Parsley Flakes
2 tbsp Dried Dill Weed
1 tbsp Dried Tarragon
½ tbsp Sugar
3 Fresh Sage Leaves
Whole Cloves of Garlic

Instructions

Wash, dry and cut Potatoes in half lengthwise and place in mixing bowl.
Add Olive Oil, Salt, Black Pepper, Onion Powder, Garlic Powder, Parsley Flakes, Dill Weed, Tarragon, Sugar, Sage Leaves and Garlic.
Place seasoned potatoes in baking dish and roast in a 400℉ oven for 30 minutes or until potatoes are golden brown but soft and fluffy inside. Remove whole garlic cloves, which will be soft and caramelized, and mash with a fork to serve with meat.

Notes

If serving these with a rack of lamb start the potatoes in the oven and about ten minutes in add the lamb and both should be ready at the same time - a perfectly timed entrée.
