My Lady Baltimore Cake

This southern treat is truly a winning dessert.

Ingredients
  

Cake

  • 2 sticks Butter
  • cups Sugar
  • 2 tbsp Pure Vanilla Extract
  • 3 cups Flour
  • 1 tbsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 1 cup Milk
  • 6 Egg Whites
  • ¼ cup Additional Sugar
  • ¼ tsp Cream of Tartar

Icing

  • 2 cups Sugar
  • cup Water
  • ¼ cup Corn Syrup
  • 1 pinch Salt
  • 4 Egg Whites
  • ¼ tsp Cream of Tartar
  • 1 tsp Pure Vanilla Extract
  • ¼ cup Golden Raisins
  • 2 tbsp Light Brown Sugar
  • 2 tbsp Southern Comfort or Bourbon
  • ¼ cup Chopped Pecans
  • 1 tbsp Additional Pure Vanilla Extract

Instructions
 

Cake

  • Cream together Butter, Sugar and Pure Vanilla Extract.
  • In a separate bowl sift together Flour, Baking Powder, Baking Soda and Salt. Add dry ingredients to creamed butter alternating with Milk.
  • In a separate bowl beat Egg Whites, Sugar and Cream of Tartar until stiff. Fold egg whites into batter and pour in well-greased baking pans.
  • Bake in 350℉ oven for 25-30 minutes or until inserted toothpick comes out clean and dry. Let cool before removing cake from pans.

Icing

  • In saucepan bring Sugar, Water, Corn Syrup and Salt to a slow boil. Continue to boil until soft syrup is formed.
  • In mixer beat Egg Whites, Cream of Tartar and Pure Vanilla Extract until stiff.
  • With mixer running slowly pour syrup into stiffened egg whites. Beat until a fluffy consistency is achieved.
  • Take 2 cups of the icing and add Golden Raisins, Light Brown Sugar, Southern Comfort, Pecans and Additional Pure Vanilla Extract. Blend well and use as filling to cake.
  • Frost the top and sides with the reserved plain icing. Refrigerate to set for at least 2 hours.
