My Lady Baltimore Cake

Ingredients
Cake
- 2 sticks Butter
- 1½ cups Sugar
- 2 tbsp Pure Vanilla Extract
- 3 cups Flour
- 1 tbsp Baking Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- 1 cup Milk
- 6 Egg Whites
- ¼ cup Additional Sugar
- ¼ tsp Cream of Tartar
Icing
- 2 cups Sugar
- ⅓ cup Water
- ¼ cup Corn Syrup
- 1 pinch Salt
- 4 Egg Whites
- ¼ tsp Cream of Tartar
- 1 tsp Pure Vanilla Extract
- ¼ cup Golden Raisins
- 2 tbsp Light Brown Sugar
- 2 tbsp Southern Comfort or Bourbon
- ¼ cup Chopped Pecans
- 1 tbsp Additional Pure Vanilla Extract
Instructions
Cake
- Cream together Butter, Sugar and Pure Vanilla Extract.
- In a separate bowl sift together Flour, Baking Powder, Baking Soda and Salt. Add dry ingredients to creamed butter alternating with Milk.
- In a separate bowl beat Egg Whites, Sugar and Cream of Tartar until stiff. Fold egg whites into batter and pour in well-greased baking pans.
- Bake in 350℉ oven for 25-30 minutes or until inserted toothpick comes out clean and dry. Let cool before removing cake from pans.
Icing
- In saucepan bring Sugar, Water, Corn Syrup and Salt to a slow boil. Continue to boil until soft syrup is formed.
- In mixer beat Egg Whites, Cream of Tartar and Pure Vanilla Extract until stiff.
- With mixer running slowly pour syrup into stiffened egg whites. Beat until a fluffy consistency is achieved.
- Take 2 cups of the icing and add Golden Raisins, Light Brown Sugar, Southern Comfort, Pecans and Additional Pure Vanilla Extract. Blend well and use as filling to cake.
- Frost the top and sides with the reserved plain icing. Refrigerate to set for at least 2 hours.
