Chicken Dijon Canapés
This rustic French dish is so delicious you could serve it at the most formal occasions and it will be a winner.

Ingredients
- 3 Sliced Onions
- 1 stick Butter
- 3 tsp Olive Oil
- Chicken Parts (bone in)
- ½ cup Dijon Mustard
- 1 cup Heavy Cream
- 1 cup Chicken Stock
- ½ cup White Wine
- 2 cloves Minced Garlic
- 1 tsp Salt
- ½ tsp Black Pepper
- 1-2 cups Button Mushrooms
Instructions
- In large Dutch oven or stock pot sauté Onions, Butter and Olive Oil.
- When onions begin to soften add Chicken Parts (bone in). Brown chicken about 3-4 minutes on each side.
- Add Dijon Mustard, Heavy Cream, Chicken Stock, White Wine, Garlic, Salt, Black Pepper and Mushrooms.
- Cover and simmer for about 1 hour or until chicken is fully cooked and tender and sauce is shiny, rich and smooth.
- Serve with crusty bread for an entree or remove meat from bone and place on crostini and dot with more sauce before serving.
