Chicken Dijon Canapés
This rustic French dish is so delicious you could serve it at the most formal occasions and it will be a winner.

- 3 Sliced Onions
- 1 stick Butter
- 3 tsp Olive Oil
- Chicken Parts (bone in)
- ½ cup Dijon Mustard
- 1 cup Heavy Cream
- 1 cup Chicken Stock
- ½ cup White Wine
- 2 cloves Minced Garlic
- 1 tsp Salt
- ½ tsp Black Pepper
- 1-2 cups Button Mushrooms
In large Dutch oven or stock pot sauté Onions, Butter and Olive Oil.
When onions begin to soften add Chicken Parts (bone in). Brown chicken about 3-4 minutes on each side.
Add Dijon Mustard, Heavy Cream, Chicken Stock, White Wine, Garlic, Salt, Black Pepper and Mushrooms.
Cover and simmer for about 1 hour or until chicken is fully cooked and tender and sauce is shiny, rich and smooth.
Serve with crusty bread for an entree or remove meat from bone and place on crostini and dot with more sauce before serving.
