Chicken Dijon Canapés

This rustic French dish is so delicious you could serve it at the most formal occasions and it will be a winner.

Ingredients
  

  • 3 Sliced Onions
  • 1 stick Butter
  • 3 tsp Olive Oil
  • Chicken Parts (bone in)
  • ½ cup Dijon Mustard
  • 1 cup Heavy Cream
  • 1 cup Chicken Stock
  • ½ cup White Wine
  • 2 cloves Minced Garlic
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1-2 cups Button Mushrooms

Instructions
 

  • In large Dutch oven or stock pot sauté Onions, Butter and Olive Oil.
  • When onions begin to soften add Chicken Parts (bone in). Brown chicken about 3-4 minutes on each side.
  • Add Dijon Mustard, Heavy Cream, Chicken Stock, White Wine, Garlic, Salt, Black Pepper and Mushrooms.
  • Cover and simmer for about 1 hour or until chicken is fully cooked and tender and sauce is shiny, rich and smooth.
  • Serve with crusty bread for an entree or remove meat from bone and place on crostini and dot with more sauce before serving.
