Arugula Salad

This is a peppery and slightly bitter green. It makes a wonderful salad and is my sister's favorite.

Ingredients
  

  • 8 cups Arugula (about 1 packed cup per person)
  • Olive Oil (drizzle)
  • Balsamic Vinegar (splash)
  • Salt (dash)

Instructions
 

  • Soak Arugula in cold salted water for 2 minutes. Drain, rinse and spin or towel dry.
  • This salad needs nothing more than a drizzle of Olive Oil, a splash of Balsamic Vinegar and a dash of Salt but use your imagination and whatever you like such as finely sliced red onion and orange sections.
