Basil-Pecorino Stuffed Pork Tenderloin

Use small tenderloins for this dish.

Ingredients
  

  • Baby Pork Tenderloin (cleaned, trimmed and butterflied)
  • ½ cup Pesto Sauce (made separately)
  • ½ cup Shaved Pecorino Romano Cheese
  • Zest & Juice of One Lemon
  • ¼ cup Additional Pesto
  • ¼ cup Breadcrumbs (panko is great here)

Instructions
 

  • Clean, trim and butterfly Baby Pork Tenderloin to a rectangular shape.
  • Spread tenderloin with Pesto. Cover the pesto layer with Pecorino Romano Cheese and Lemon Zest and Lemon Juice.
  • Roll tenderloin and place seam side down on roasting pan. Spread outside of tenderloin with additional ¼ cup of Pesto. Sprinkle with Breadcrumbs.
  • Roast in a 400℉ oven for 35-40 minutes or until browned and internal temperature reads 155-160℉. Let rest 10 minutes before slicing.
