Basil-Pecorino Stuffed Pork Tenderloin

- Baby Pork Tenderloin (cleaned, trimmed and butterflied)
- ½ cup Pesto Sauce (made separately)
- ½ cup Shaved Pecorino Romano Cheese
- Zest & Juice of One Lemon
- ¼ cup Additional Pesto
- ¼ cup Breadcrumbs (panko is great here)
Clean, trim and butterfly Baby Pork Tenderloin to a rectangular shape.
Spread tenderloin with Pesto. Cover the pesto layer with Pecorino Romano Cheese and Lemon Zest and Lemon Juice.
Roll tenderloin and place seam side down on roasting pan. Spread outside of tenderloin with additional ¼ cup of Pesto. Sprinkle with Breadcrumbs.
Roast in a 400℉ oven for 35-40 minutes or until browned and internal temperature reads 155-160℉. Let rest 10 minutes before slicing.
