Shrimp Etouffee

Ingredients
  

  • 1 cup Flour
  • ½ cup Butter
  • ½ cup Olive Oil
  • 2 Large Diced Onions
  • 2 Green Peppers (washed and diced)
  • 4 stalks Diced Celery
  • 3 cloves Minced Garlic
  • ½ tsp Black Pepper
  • ½ tsp Cayenne
  • 1 tbsp Cajun Seasoning
  • 3 tbsp Hot Sauce
  • 1 can Diced Tomatoes (large can)
  • 1 tsp Salt
  • 2 lbs Shrimp (raw, cleaned and deveined - 21-30 ct is good)
  • 3 tbsp Additional Butter
  • Chopped Scallion (for garnish)

Instructions
 

  • In saucepan make roux cooking Flour, Butter and Olive Oil for 5-6 minutes or until flour turns nutty brown.
  • Add Onions, Green Peppers, Celery, Garlic, Black Pepper, Cayenne, Cajun Seasoning, Hot Sauce, Tomatoes and Salt. Bring to a boil and simmer until vegetables are soft.
  • Add Shrimp and Additional Butter and cook 3-5 minutes or until shrimp are pink and cooked. Serve with rice and garnish with chopped scallions.
