Shrimp Etouffee

Ingredients
- 1 cup Flour
- ½ cup Butter
- ½ cup Olive Oil
- 2 Large Diced Onions
- 2 Green Peppers (washed and diced)
- 4 stalks Diced Celery
- 3 cloves Minced Garlic
- ½ tsp Black Pepper
- ½ tsp Cayenne
- 1 tbsp Cajun Seasoning
- 3 tbsp Hot Sauce
- 1 can Diced Tomatoes (large can)
- 1 tsp Salt
- 2 lbs Shrimp (raw, cleaned and deveined - 21-30 ct is good)
- 3 tbsp Additional Butter
- Chopped Scallion (for garnish)
Instructions
- In saucepan make roux cooking Flour, Butter and Olive Oil for 5-6 minutes or until flour turns nutty brown.
- Add Onions, Green Peppers, Celery, Garlic, Black Pepper, Cayenne, Cajun Seasoning, Hot Sauce, Tomatoes and Salt. Bring to a boil and simmer until vegetables are soft.
- Add Shrimp and Additional Butter and cook 3-5 minutes or until shrimp are pink and cooked. Serve with rice and garnish with chopped scallions.
