Dirty Rice Jambalaya

Ingredients
  

  • ¼ cup Olive Oil
  • 2 Diced Onions
  • 2 cloves Minced Garlic
  • 1 Finely Diced Green Pepper
  • ½ cup Diced Tomatoes
  • 3 cups Basmati Rice
  • 6 cups Vegetable Stock
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 2 tbsp Hot Sauce
  • ¼ cup Chopped Cilantro (optional)
  • 1 Diced Jalapeño (optional)
  • 1 can Red Beans (large can rinsed and drained)

Instructions
 

  • In large pot sauté Olive Oil, Onions, Garlic, Green Pepper and Tomatoes. Cook just until onions and peppers are slightly softened.
  • Add Basmati Rice and sauté rice for 3 minutes.
  • Add Vegetable Stock, Salt, Black Pepper, Onion Powder, Garlic Powder and Hot Sauce. (Option to add Cilantro and Jalapeño as well).
  • Cook covered until most of the liquid is absorbed. Add Red Beans and serve.
