Dirty Rice Jambalaya

Ingredients
- ¼ cup Olive Oil
- 2 Diced Onions
- 2 cloves Minced Garlic
- 1 Finely Diced Green Pepper
- ½ cup Diced Tomatoes
- 3 cups Basmati Rice
- 6 cups Vegetable Stock
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 2 tbsp Hot Sauce
- ¼ cup Chopped Cilantro (optional)
- 1 Diced Jalapeño (optional)
- 1 can Red Beans (large can rinsed and drained)
Instructions
- In large pot sauté Olive Oil, Onions, Garlic, Green Pepper and Tomatoes. Cook just until onions and peppers are slightly softened.
- Add Basmati Rice and sauté rice for 3 minutes.
- Add Vegetable Stock, Salt, Black Pepper, Onion Powder, Garlic Powder and Hot Sauce. (Option to add Cilantro and Jalapeño as well).
- Cook covered until most of the liquid is absorbed. Add Red Beans and serve.
